What you will need: Olives 1 kg, Bay leaves 2 pieces, Panchphodan 2 tablespoons, Turmeric, Chilli, Coriander powder 1 teaspoon each, Ginger and garlic paste 1 teaspoon, Salt, Sugar to taste, Desi garlic cells half cup, whole black pepper 5/ 6 pieces, mustard oil 1 cup, mustard paste 2 tablespoons, vinegar 2 tablespoons, sodium benzoate half teaspoon.

Method of preparation: Olives should be boiled in boiling water for 2/3 minutes. Then apply salt and turmeric and dry it in the sun for some time. Make a paste with turmeric, chilli, coriander powder, salt, sugar, mustard paste, and vinegar in a bowl. Add mustard oil to the pan and add dry chillies and garlic. Then lightly fry with the masala paste. Stir in the olives. Before lowering the heat of the stove, stir with sodium benzoate. Juicy Olive Pickle or Olive Sour Pickle is ready.

Method of preparation: Boil the olives and grind them. Make a paste with turmeric, chilli, coriander, mustard paste, salt, sugar, vinegar, ginger and garlic paste. Boil black cumin seeds in a pan with mustard oil. Then fry the garlic in Bombay chilli oil. Then mix it with the masala paste. Leave the olives crisp and shake. After leaving the oil, reduce the heat of the stove and stir it with sodium benzoate. Keep warm in clean sterilized bottles. The olive pickle is ready.

Method of preparation: Chop the olives. Then apply salt and keep it for three to four hours. Squeeze out the sour water with a thin cloth. Now in a bowl, mash together the crushed olives, mustard paste, beet salt, crushed garlic, sugar, crushed green chillies, Panchphoran vinegar, and kasundi and fill it in a clean sterilized glass bottle. Delicious olive sponge pickle is ready.
